What they look like:
Nice pearly white color which tend to darken as the mushroom matures

Aroma:
slightly anise

Taste:
Mild with a woodsy taste

Uses

  • Egg dishes, great in omelets, quiches and frittatas
  • Asian Dishes like stir-fry
  • Seafood and white meat
  • Soups and rice dishes

Preparation

  1. Like other oyster mushrooms, they cook quickly 
  2. Saute or stir-fry in butter or oil
  3. Are soft and slightly chewy before cooking

Tips

When adding to dishes that will be cooking for a while, add at the very end since they cook quickly
