  2. If prepared whole, allow a longer cooking time for this meaty mushroom
  3. Likened to that of squid or scallops
  4. Very savory
  5. Dense, chewy, almost resilient texture
  6. Simmering will not make them soggy
  7. Cutting it into rounds helps break down the fiber and makes it easier to chew
